Why is a Butcher Block Cutting Board Better?

Most professional chefs will have, as their first choice, a butcher block cutting board. The primary reason that butcher block cutting boards are so popular is the method of construction and how this interacts with the chef’s knife and the food being cut.

Placing the end grain blocks of a butcher block cutting board facing up allows the grain to form a perpendicular surface with the knife. This end grain feature means that when a knife passes across the butcher block cutting board the grain will open slightly and then immediately close back up after the knife leaves the board. The unique “self-healing” effect of the end grain cutting board results in fewer knife scares on the cutting board and a butcher block cutting board that will last significantly longer than other edge or face grain cutting boards.
